Les mettre dans une casserole. Ajouter le vin, la liqueur de cassis, le sucre. Ouvrir la demi gousse de vanille et gratter l&#8217;int\u00e9rieur, mettre le tout dans la casserole, avec toutes les \u00e9pices.  <\/li><li class=\"direction-step\">Cuire \u00e0 feu vif, puis \u00e0 \u00e9bullition, baisser un peu le feu. Surveiller en piquant les poires car elles ne doivent pas \u00eatre trop cuites. Les sortir de la casserole sur une assiette. Continuer la cuisson de la sauce de mani\u00e8re \u00e0 la rendre un peu sirupeuse. Retirer du feu et laisser refroidir, mais ne pas la verser sur les poires.<br \/> <\/li><li class=\"direction-step\">Dans chaque assiette de service, disposer joliment 2 demi poires dont on aura retir\u00e9 le c\u0153ur et les p\u00e9pins, une quenelle de glace aux sp\u00e9culos,  et des morceaux de meringue concass\u00e9e. Servir la sauce des poires en sauci\u00e8re \u00e0 part.
