d\u00e9noyautez les olives; rappez le zeste de l&#8217;orange; \u00e9gouttez les tomates. <\/li><li class=\"direction-step\">Coupez les tranches de poitrine de porc en lardons, mettez les dans une casserole avec de l&#8217;eau froide et portez \u00e0 \u00e9bullition, passez les ensuite sous l&#8217;eau froide et \u00e9gouttez-les.<\/li><li class=\"direction-step\">Faites chauffer le four \u00e0 200\u00b0C, \u00e9gouttez la viande en mettant la marinade de c\u00f4t\u00e9; tapissez le fond et les parois d&#8217;une cocotte avec la moiti\u00e9 des couennes; disposez dans le fond une couche de b\u0153uf, puis les  oignons, carottes, ail, zeste, olives, lardons, tomates, le bouquet garni, puis recouvrez avec le reste de la viande; salez et poivrez; arrosez avec la marinade (rajoutez du vin allong\u00e9 d&#8217;eau si n\u00e9cessaire pour couvrir l&#8217;ensemble); posez les derni\u00e8res couennes sur le dessus.<\/li><li class=\"direction-step\">On peut porter \u00e0 \u00e9bullition; pour ma part je le fais cuire \u00e0 couvert directement dans le four pendant 5 heures environ.  Surveiller la cuisson; une demi heure avant la fin, ajouter les champignons apr\u00e8s les avoir nettoy\u00e9s, coup\u00e9s en quartiers, fait rissoler. Saupoudrez de persil hach\u00e9 avant de servir.<\/li><\/ul>\n\t\t\t<\/div>\n\n\n<p><em>Remarques : ma pr\u00e9f\u00e9rence va \u00e0 la joue comme morceau de b\u0153uf. Certaines recettes proposent aussi une marinade au vin rouge et les l\u00e9gumes associ\u00e9s au b\u0153uf dans la marinade.
