disposer la farine en fontaine dans un saladier ; mettre au  milieu le sucre, le sel, le jaune d\u2019\u0153uf et un demi d\u00e9cilitre d\u2019eau ; m\u00e9langer rapidement. Incorporer le beurre \u00e0 la tarte sans la travailler ; rouler en boule, et laisser reposer entre une demi-heure et une heure. <\/li><li class=\"direction-step\">Laver  un citron, raper son zeste, presser la pulpe, puis casser les \u0153ufs et  les battre avec 50g de sucre ; quand le m\u00e9lange blanchit, incorporer  poudre d\u2019amandes, le jus et le zeste du citron. <\/li><li class=\"direction-step\">Beurrer le moule \u00e0 tarte avec 10g de beurre, puis aplatir la p\u00e2te bris\u00e9e au rouleau et garnir le moule. <\/li><li class=\"direction-step\">Verser la cr\u00e8me dans le moule et faire cuire 30mn \u00e0 four moyen. <\/li><li class=\"direction-step\">Laver les deux derniers citrons et les couper en rondelles fines. <\/li><li class=\"direction-step\">Faire  cuire 10 minutes le reste du sucre avec un quart de litre d\u2019eau et la  vanille.
